A cheese typified by a semi-hard, compact paste of pale straw yellow colour, with evenly distributed eyes of uniform size. A maturing period of at least sixty days is required in order to obtain a cheese of soft and delicate flavour, suitable for slicing; if aged longer, the flavour will become aromatic, and moderately piquant.

Description

San Pietro Honeywax is a special cow’s milk cheese from Italy’s Veneto region, produced by Latteria Perenzin. Produced with locally sourced milk from the cooperative of farms in the area, San Pietro is aged for 16 to 18 months, and are then coated with beeswax and aged for an additional three months. The beeswax coating provides protection from molding, and allows the cheese to retain moisture while giving off a light, heavenly honey aroma. The cheese is crumbly in texture, akin to Parmigiano Reggiano, but gives off a slightly sweet taste, like many of its aged Italian counterparts.
