In Italy, parmesan cheese is called Parmigiano-Reggiano.  Parmigiano-Reggiano must follow requirements by law in regards to aging, the food the milk-producing cows eat, as well as be produced in certain, specific regions.  Conversely, in other countries including America, parmesan does not have the same regulations.  Most likely, a Parmesan cheese from any other country except Italy is an imitation.  Granted, there are many amazing cheesemakers in the world, but if you have the opportunity to cater to your authentic cuisine, then only the best will do.

So why take chances?  You want your customers to return time again, and to post on social media that you have the best Italian food.  Don’t let them visit your competition only to discover a difference in flavors because your ingredients are not true Italian varieties.
